The visible canopy
The hood sits above the cooking line. A shiny exterior does not explain the condition of the components inside, so ask what interior surfaces are included.
Removable filters
Baffle filters collect grease from the airstream. Ask whether removal and cleaning are included and whether damaged filters need separate replacement.
Ducts and fan access
Ductwork connects the hood to the exhaust fan. Access can vary between kitchens. Ask what can be reached and how the cleaning scope deals with limited access.
Confirm specialist work
Cleaning and equipment repair are different tasks. Confirm whether a repair needs a separate qualified contractor, and never attempt to service fire suppression equipment yourself.
